Recipe: Italian Sausage Stuffed Winter Squash

One surprise I got from my garden this year was more winter squash than I know what to do with. Since I was running out of room in my fridge and didn’t feel like freezing it yet, I decided to use one as part of dinner tonight and made this recipe.

Ingredients:

1 winter squash (about medium size)

½ pound ground Italian sausage

Shredded cheese (I used an Italian blend but you can use whatever cheese you like)

Instructions:

Wash the winter squash and slice it in half. Scoop out the seeds (this will leave a bowl-like shape in each half).

Place the squash cut-side down in a microwave safe dish. Spray the outer skin lightly with cooking spray.

Microwave both halves for 5-7 minutes (watch the squash to make sure you don’t overcook it because it will be going in the oven later).

While the squash is cooking, brown the ground sausage. I didn’t do this but you can add other ingredients like cut pepper and onion if you like.

Preheat your oven to 350.

Once the squash is done and the sausage is brown, place the two squash halves on a pan cut side up. Scoop the ground sausage into each half (depending on the size of the squash, you might have some leftover).

Sprinkle your shredded cheese over the sausage. Add as much as you like.

Put the squash inside the oven for 10-15 minutes or long enough for the cheese to melt and the squash to be fully cooked.

Take out of the oven and serve. This will feed two people.
