Easy Eggs Benedict
Start with the Hollandaise Sauce
You can purchase a jar or cook from scratch
2 eggs
3 1/2 tbsp lemon juice (fresh squeezed preferred but not required)
1/2 cup real butter
Double the recipe if you like lots of sauce
In a small 1 qt saucepan slightly whip eggs with juice then add butter.
Heat stirring constantly with a wooden spoon over low-low medium heat.
Too high a heat causes curdling. Cook until sauce begins to thicken then remove from heat.
Do not cover. Cool 5-7 minutes
Can be prepared in a microwave
Use a pint microwave dish. Melt butter first takes 30-50 seconds.
Add lemon juice. Whisk in eggs. Microwave uncovered at 20 second intervals, stirring in between
until sauce is thickened. Overcooking causes curdling. Cool at least 5 minutes.

3 English muffins
butter
6 thin slices of ham

Split 3 English Muffins (biscuits or toast may be substituted) Butter lightly and brown in a skillet ( if using bread–toast as usual and then lightly butter)
Poach 6 eggs in a poacher or skillet
Fry 6 slices of thinly sliced ham (I prefer Canadian Bacon or smoked ham)
Place ham on muffin halves, top with egg, add 1 tbsp or so of sauce
For a tasty twist top with your favorite shredded cheese while still warm enough to melt or add diced black olives, pimento dices, diced green onion or chives, bacon crumbles, picante. Use your imagination.
These are Wonderful.

Fancy Scrambled Eggs
Mix 1 tbsp half & half or milk to each 3 eggs, whip adding salt & pepper to taste and fry on low-medium heat. Do not brown. For ZEST try adding any or a combination of your favorites: 1 tbsp dry or snipped basil, marjoram, tarragon, thyme, rosemary, sage, cumin, parsley, chives, cilantro and/or 2-3 tbsps grated cheese per egg after cooking, and/or add to the mix any or a combination of these chopped mushrooms, crumbled fried bacon, chopped dried beef, fully cooked chopped ham or smoked ham or canadian bacon,cooked and crumbled sausage of any type, Serve plain or with fancy catsup, mustard or picante. Add Croissants, biscuits or toast to complete.

Egg Foo Yolklahoma
3-4 Tbsp cooking oil
6 eggs
1 1/2 cups bean sprouts
1 cup crumbled fully cooked bacon, sausage, ham or canadian bacon
4 Tbsps chopped green onions or snipped chives (optional)
1 cup grated cheese, sharp cheddar or your favorite
Heat oil in 10″ skillet whip eggs for 3 full minutes & then stir in other ingredients
Cook over low-medium heat until eggs are set and done
Sauce
1 cup water
1 tbsp corn starch
1/2 tsp sugar
2 tsps cider vinegar
3 tbsp soy sauce
cook in 1 qt sauce pot over medium heat until thickened
Or substitute pre-packaged sweet & sour sauce or your favorite Oreintal sauce

Toasted Denver Breakfast Sandwiches
1/2 stick softened butter
8 slices of your favorite bread
1/2 cup chopped green onion or snipped chives
1/4 cup chopped pepper, green, yellow, red, chilli or jalepeno
1 tbsp cooking oil
6 eggs
3/4 cup fully cooked chopped smoked ham or canadian bacon
1/2 tsp white pepper
1/4 tsp sea salt
Toast & butter bread
Cook onion & pepper in oil until tender
Whip eggs in stainless steel or glass bowl and add remaining ingredients, Pour over onion/pepper mixture and cook until done. Do not scramble. Cut into 4 pieces to turn and cook.
This makes 4 sandwiches and is good sprinkled with your favorite grated cheese.

Simply Souffle
1/2 cup butter
1/2 cup flour
1/2 tsp sea salt
1/2 tsp white pepper
1/2 tsp dry mustard
1-3 Tbsp chunky salsa (depending on personal taste) optional
2 cups half & half or whole milk
2 cups mild or sharp cheddar cheese
6 eggs
1/2 tsp cream of tartar
Pre-heat oven to 350 degrees
Butter 2 qt souffle or casserole dish
This must be a deep dish as souffle will rise to 6-8 inches high
Melt butter in 2 qt sauce pan
Blend in flour and next 3 ingredients
Heat until bubbling-do not brown
Add picante and milk stir constantly until thickened. stir in cheese until melted
Beat egg whites with cream of tartar
Beat egg yolks for 3 minutes & stir into cheese mixture
Fold in egg whites
Pour into dish and bake uncovered about 20-30 minutes
until knife inserted into center comes out clean

If your pan is not deep enough use extra strength aluminum foil in a circle
above the dish, wired on to add extra heighth. Butter or oil inside of aluminum.
1 Cup Cooked shrimp, crab or breakfast meat may be added to cheese sauce

Bacon & Egg Bake
1 1/2 cup toasted bread crumbs
4 Tbsp butter
6 peeled- hard boiled eggs
8 slices of bacon, fried and crumbled /sausage or ham may be substituted
1 cup sour cream
3 Tbsp freshly snipped green onion or chives
2 Tbsps milk
1/2 tsp sea salt
1/2 tsp paprika
1 tsp pepper
3/4 cup grated American, cheddar, colby or Monterey cheese
1 dozen cup cake liner cups
1 muffin tin (12 hole)
Mix bread crumbs with melted butter, distribute evenly among 12 lined muffin cups
Mix bacon, sour cream and all other ingredients except cheese
Pour evenly over bread crumbs. Sprinkle with cheese.Cook uncovered at 350 degrees 10-15 minutes until cheese in melted

Breakfast Rice & Creamed Corn Bake
5 eggs separated
1 can cream style corn 16 oz or smaller
2 cups instant rice
1 1/2 cup shredded American, cheddar, monterey, colby or colby-jack or pepper-jack cheese
1/2 cup milk
1 tsp sea salt
1/2 tsp dry mustard
1/2 tsp pepper
Mix egg yolks with other ingredients
Beat egg whites until stiff and fold into mixture
Pour into greased 2 qt casserole dish cook uncovererd 30-40 minutes until knife inserted into center comes out clean
1 cup fully cooked and crumbled breakfast meat or crab or shrimp may be add to egg mixture before folding in egg whites

Creamed Eggs
4 Tbsps butter
3 Tbsps flour
1/2 tsp sea salt
1/2 tsp pepper
2 1/2 cups milk
6 hard boiled eggs-peeled & sliced
Step 1 Melt butter in sauce pan over low heat
Step 2 Stir in flour, salt & pepper, cook until smooth & bubbly
Step 3 Add milk bring to boil stirring for an additional 2 minutes
Remove from heat, stir in eggs
Step 4 Serve on toast, biscuits or English muffins
To create creamed eggs and ham
Add 1/4 tsp dry mustard in Step 2 & add 1 cup cooked ham, smoked,ham or canadian bacon when adding eggs in Step 3
Bacon and sausage are also good additions
A small jar of well drained diced pimento and or chulli peppers adds color and flavor in Step 3

Oven French Toast
4 eggs
1/4 cup half & half or milk
1 tsp real vanilla
1 1/2 tsp sugar (optional)
1/2 tsp sea salt
1/2 tsp white pepper or substitute 1 tsp cinnamon + 1/2 tsp nutmeg
9 slices of your favorite bread
Pre-heat oven to 350 degrees
Generously grease a large cookie sheet
Beat eggs, milk, vanilla, salt & pepper well
Heat cookie sheet in oven 2-3 minutes
Dip bread slices in egg mixture and arrange on cookie sheet
Bake 6-7 minutes until bottoms are lightly browned/ flip and bake an additional 3-5 minutes
Serve with your favorite syrup or preserves
My favorites toppers are fruit syrups and heated real maple syrup

Pancake Treats
Using pre-packaged pancake mix substitute orange juice concentrate for milk or water and add 1/2 cup flaked coconut & 1/2 cup slivered almonds or chopped English walnuts or pecans to batter. Wow! This is yummy.
OR Try substituting your favorite flavored yogurt for water or milk.

Eggs In A Hole (Pictured)
Using your favorite sliced bread, use a cookie cutter any season or holiday shape and cut the center out of the bread slice.
lightly grease a 10″ skillet drop bread into skillet, drop an egg into the hole, fry on medium until done on under side and flip cooking until egg white is thoroughly done and yolk is as you like it. Fry the cut out, toasting on both sides. Sprinkle the cut out only with cinnamon sugar. Kids love these and so does this cook (Grandma).
