A: you can dig them when the vines start to die. dig them and let dry for a day and then store in a cool, dry, dark place. will keep for a long time. and yes are like can yams. you can cook by baking(my fav.), or boiling and mashing, or sliced thin and fried. I like to bake, cool, peel then cut, melt butter in pan add brown sugar cook for a couple of minutes and pour of sweet potatoes in over proof dish and bake again until heated through. candied sweet potatoes. very good. can also add pecans and/or apple slices.
