When my husband informed me he needed to take a dessert to work the following day, I picked up a box of Libby’s All Natural Pumpkin Bread Kit with Icing at my local Walmart store. The price seemed a bit high, retailing for just under $6.00, but the kit makes two loaves of pumpkin bread, making it actually quite affordable.
This was found in a center aisle display with other foods and baking pans intended for Thanksgiving. I’ve never seen it available other times during the year, so I plan on returning to the store and stocking up! It is so easy to prepare and it truly tastes like it was made from scratch.
The box contains one can of Libby’s pumpkin, one bag of bread mix and one icing packet. The only ingredients I needed to provide were four eggs, one half cup of vegetable oil and water. Making this bread couldn’t be easier! After combining the eggs, oil, water and pumpkin you simply mix in the bread mix and stir. Pour the batter into two bread pans and bake for around an hour.
I find banana bread, zucchini bread and pumpkin bread a bit bland, so I added two cups of chopped pecans to the batter, and this really added a nice texture and flavor to the bread. A convenient chart is printed on the back of the box, listing a variety of ways to make the Libby’s All Natural Pumpkin Bread Kit with Icing. It can be prepared in two 9″ by 5″ loaves, three 8″ by 4″ loaves, six mini loaves, one 13″ by 9″ pan, a Bundt cake pan, twenty four standard muffins, seventy two mini muffins, or twelve jumbo muffins.
Suggested variations are adding dried cranberries, chopped nuts, chopped apples, or raisins to the batter. You can also substitute apple or orange juice for the water, which sounds very appealing! The next time I make this I am going to try adding orange juice. There is even a recipe to make your own streusel topping by mixing flour, sugar, cinnamon and butter together! How versatile is that?
Libby’s All Natural Pumpkin Bread Kit with Icing comes out perfect. The loaves are moist and flavorful, and not the least bit crumbly. A bonus is the icing that is included with the kit. After tearing off one corner of the icing packet I was able to squeeze it onto the bread, making a diamond shaped decoration. This turns simple pumpkin bread into a pumpkin dessert!
