Pillsbury Pumpkin Cookies

Pillsbury has come out with a new line of holiday cookie mixes this year that are amazingly like homemade. I am not one who usually buys box mixes, but the pumpkin flavor caught my eye in the store so I bought a box to try. This was a big mistake on my part as I see a new habit taking root.

The first box was gobbled up in 30 minutes by my husband and kids. The cookies were very easy to mix together adding only butter and an egg. I dropped the dough with a teaspoon, so there was no mess from r rolling and cutting. They formed perfect circular cookies after 9-10 minutes in the oven. I left them to cool on the pan for a few minutes as they suggested before moving them as they are very soft. Once they cool for ten minutes you can add cream cheese frosting and sprinkle with pumpkin spice.

This is a very rich treat with the frosting and you can only eat a few. My family actually preferred the plain cookie hot out of the oven. These cookies were so soft and full of pumpkin flavor I got several more boxes on my very next trip to the store. I admit I was a bit worried they would pull them after the holidays. I noticed they also had two other flavors, chocolate peppermint and traditional sugar, which I also purchased to try. I have since made the pumpkin cookies several times for others and everyone thought I had made them homemade and wanted the recipe. Many people have never tried pumpkin cookies and so they are a real delightful holiday treat. I promise you will not be disappointed with these cookies.
