Quick and Easy Vodka Sauce
One of my favorite Italian Pasta dishes is Penne with Vodka Sauce. My wife makes a killer Vodka Sauce, one that she spends hours preparing. I promise I will one day share that recipe with you, but for now, let’s talk time savor. How about A quick and easy Vodka Sauce for those days when you just want your pasta night to be a little different. We’re talking a Vodka Sauce to spread over the lobster ravioli that was on special at the Italian deli, or a creamy Vodka Sauce for when a last minute get together with family or friends is in the mix.
The great thing about this version is that it is so quick and easy you can spend a little extra time fancying it up if you choose. Here’s all you need. A jar of your favorite Red Sauce or a quart of your home made gravy, as my mom used to call it. A ½ pint to a pint of heavy cream and ¼ cup of vodka and that’s it. Jeez, can it get any easier. Find a large enough pot to hold everything and combine the three ingredients. Add the heavy cream last and stir until the sauce gets that nice pink color you are looking for. There is not need to spice things up, as the spices are already included in your sauce. Cook up your pasta, heat up the sauce and combine.
If you do have some extra time, throw in a little Italian sausage. Chop it up good and add it to the sauce. I prefer hot sausage especially if you are topping this over something rich, like that lobster ravioli we talked about. All you need to do now is pick up a package of ready made salad and you are done. Listen, you don’t have to let your guest or unsuspecting family members in on our little secret. Let them image that you’re just one talented cook to wipe up a killer Vodka Sauce on such short notice. Pop open a nice bottle of Pinto Blanc or a California Pinot Noir and you can sit back and take in the praises.
