A: Get yourself a few good cookbooks. I love “Vegan With a Vengeance” by Isa Chandra Moskowitz. Everything I’ve tried has been yummy (the pumpkin muffins are so good I’ve made them twice in the last week!) I have been transitioning to veganism over the last couple of weeks (9/26 is my drop-dead date for all dairy and eggs) and have been worried about missing cheese, but there’s so much you can do without it. A: Here are 3 great recipes!Carrot Cake with ‘Cream Cheese’ Frostingcake: 2 C sugar 2 C flour 2 t cinnamon 2 t baking soda 1 t salt small pkg. flaked coconut 2 C shredded carrots 1 C chopped walnuts 1 C oil 3 egg replacers 2 t vanilla 1 (7-oz) can crushed pineapple, drained frosting: 1 pkg. vegan cream cheese 1/4 stick soy margarine 1/2 pound powdered sugar Mix sugar, flour, cinnamon, soda, and salt in large bowl.Set aside. In another bowl, mix coconut, carrots, and nuts.Add to dry ingredients. Add oil, egg replacers, vanilla, and pineapple.Mix and pour into greased 9×13 inch pan. Bake at 350F for 35-45 minutes, or until toothpick poked into middle comes out clean – it should be a little spongy.wait until cool to frost. For the frosting, just whip the soft cream cheese and margarine with the powdered sugar. CHOCOLATE CAKE1 1/2 cups flour 3 Tablespoons cocoa 1 teaspoon baking soda 1 cup sugar 1/2 teaspoon salt 5 Tablespoons cooking oil 1 Tablespoon vinegar 1 teaspoon vanilla 1 cup cold water Put the sifted flour back in the sifter, add the cocoa, soda, sugar, and salt and sift this directly into a greased square cake pan about 9x9x2 inches. Q: I live in Norway, were there aren’t many vegans or vegetarians. As a consequence of this, there are not many vegan-friendly products in the stores (especially not in the small town where im currently living, and the few i can find, are verrry expensive. Any suggestions on how to stay vegan without the access to tofu, egg and milk free products, etc?Of course i enjoy the fresh vegetables my country has to offer, and i eat a lot of fruit and nuts, but this gets a little boring in the long run..
