A: Here are some very tasty recipes for snacks. Unfortunately you didn’t note if you have access to a stove/oven. I hope one of these works for you. <3Italian NachosI specifically left out amounts so that you can decide how much you want to make of these delicious Italian Nachos. They are amazingly wonderful and once you have tried them you will think of all the little things you want to change or add.Ingredients:Won Ton Wrappers, either square or round will workItalian Sausage, if linked, remove from casingOnion, choppedPepperchini Peppers, mild peppers usually found with pickles in the marketSauce (you can use either alfredo or marinara sauce, either are great)Parmesan Cheese, gratedPreparation:Fry your won ton wrappers till crisp and bubbly. Set on paper towels to dry.While the wrappers dry, fry the sausage and onion, you want to have little bits of sausage that you can sprinkle on the won ton wrappers.Pick a sauce and make it. You can certainly use bottled sauce. Grate the cheese.When ready to serve, place the fried wrappers on a platter. Pour a little sauce over the wrappers. Sprinkle on the sausage/onion mix. Top with grated parmesan cheese.The platter can be served at room temperature or heated in the oven prior to serving. Warning: These are so addictive!Caramelized Onion PalmiersIngredients:2 tbsp unsalted butter2 sweet onions, thinly sliced1 clove garlic1 tbsp fresh thyme, chopped1 to 2 oz feta cheese, crumbled1 sheet of store bought puff pastry, thawed2 tbsp cornmealsaltpepperPreparation:Heat the butter in a saute pan over medium heat. Spread the onion mixture on the puff pastry, leaving about 1 inch around the edges.Start rolling one of the short edges towards the middle. Then roll the opposite edge to meet up in the middle. This will make a log shape. Brush a little water in the center where the two rolled halves meet. Turn the log onto its side and press down slightly so the halves stick together. Wrap tightly in plastic wrap and place in the freezer for at least 30 minutes to firm up. This makes it much easier to cut.When ready to bake, preheat the oven to 400 degrees. Remove the log from the freezer and slice into 1/4 inch disks. Place the cut side down on a parchment covered sheet pan. Bake for about 20 minutes until the puff pastry is golden brown and cooked through. Best served warm, but also good at room temperature.Makes about 20 palmiers, 4-6 servings as an appetizer.Olive-Stuffed Goat Cheese BitesIngredients:1 (4.5-ounce) jar Lindsay Spanish Olives Stuffed with Almonds, drained6 ounces goat cheese4 ounces cream cheese1/2 cup toasted almonds, finely choppedPreparation:Place olives in colander and rinse under cold water. Pat dry with paper towels.In medium bowl, combine goat cheese and cream cheese. Form a rounded teaspoon of cheese mixture into a small ball, and transfer to parchment-lined baking sheet; repeat with remaining cheese mixture, making 24 balls in all. Chill for 30 minutes or until firm.In each ball, make a small indent with your finger. Place an almond-stuffed olive into the indent and mold the cheese around the olive.
