How to Make Cheese Zombies

While the title may suggest a ghastly treat perfect for Halloween, it isn’t so in this case. A cheese zombie is a bread roll that has melted cheese and sometimes other ingredients on the inside but not on the outside. Many schools in Portland don’t serve cheese zombies because they are a little higher priced that what their budget can allow for. Many Portlanders have never experienced the delicious flavors of a cheese zombie, however, they can now.

You Need:

2 cups warm water 1 1/2-2 tbs yeast 6 cups bread flour 1/4 cup sugar 1 – 1 1/2 tsp salt depending on taste 1/4 cup butter Dissolve the yeast in water, this takes approximately 10-15 minutes. Once the yeast is disolved, add the remaining ingredients in no particular order to the yeast and mix with a dough hook for 10 minutes. The dough should be pliable and soft. Allow the dough to rest for five minutes then portion into one pound portions. Roll each portion into a log and cut them into five portions. These are going to be the rolls you will stuff with cheese. Place your favorite filling onto each “roll”. Some good items include pepperoni, cheese, sausage, scrabbled eggs, bacon or other delectable ingredients. For a true zombie afficianado, only cheese will do. If you want to make a traditional zombie, use 2 ounces of cheese for each one. Pull the dough up from the sides of the roll to envelope the filling. Pinch closed tightly. You don’t want any “leaks” of your filling coming out during the baking. These are supposed to be pockets of bread with a filling. Place these pinched side down on a piece of parchment paper or a greased cookie sheet. Allow them to rise until they are double in size. Bake at 350 Degrees for approximately 10 to 15 minutes or until browned.
