How to Make a Gourmet Cranberry Jelly

Mom always made the cranberry sauce by hand but also opened a couple of cans for the babies and the pussy’s. Here’s how to make a gourmet cranberry jelly for your holiday table.

2 lbs. whole cranberries

2 apples grated

1 stem lemon grass, chopped fine

2 t. grated ginger

1 T. good soy sauce

1 bottle white wine

Simmer the wine, lemon grass, ginger, soy and grated apple for 10 minutes. Add the cranberries and cook until they pop. Cool the mixture for an hour then run it through a food mill. You can pour the liquid into molds or simply cool in a serving bowl. The pectins in the apple and the berries will make it jell. I’d use a sweeter wine like a nice Gewurtztraminer but use what you like. Resist the impluse to add any sugars.
