Add in the hard times of the depression, and food rationing during WWII, and you can see why people would want cheaper (if less tasty) food.Yes, butter and margarine have about the same number of calories. Yes, butter has more saturated fat (which is why people thought it was less healthy until the truth about trans fats was known). And yes, butter increases the absorption of fat-soluble nutrients, but that is true for ANY fat, including margarine, vegetable oil, meat fat, etc.Yes, butter tastes better and has been around for thousands of years, but this is irrelevant to how healthy it is.I don’t know about those health claims, like margarine increases the risk of cancer five fold. Plastics are polymers, with a lot of possible structures. Margarine is not a polymer.And sure, you can leave out margarine for a few days and nothing will happen. You can do the same thing with a sack of sugar, a sack of flour, a bag of peanuts, some canola oil, etc. All this shows is that margarine is shelf stable.
